As old as the Euskal Herria (Basque Country) itself, Idiazabal cheese has been produced in the Basque Country and Navarra for thousands of years. Made from raw sheep’s milk, the cheese must be cured for between dwo and six months and it can be smoked or not, although traditionally have been known as smoked cheeses.
